In a large frying pan, sauté the finely chopped onion and grated ginger in a drizzle of extra virgin olive oil.
Dredge the chicken pieces in flour and add to the frying pan.
Season with a pinch of salt and freshly ground pepper. Leave to cook for about 15 minutes.
Reduce the heat to low. Add the toasted almonds, soy sauce and half a cup of water.
Stir gently to blend the flavours. Season with salt and pepper and continue to cook for a further 3 minutes, until the sauce has thickened slightly.
