This legendary salad is named after its inventor, Cesare Cardini, an Italian chef who emigrated to the US. Our favourite version is the classic one, with chicken breast and Caesar dressing, and we make it without taking shortcuts. We’ve chosen three different whites for the wine pairing: the choice is yours!
Wash and dry the lettuce leaves well, cut them into strips and put them to one side. Cut the bread into cubes, finely chop a clove of garlic and heat it together with a little oil, then toast the bread for croutons.
Prepare the dressing by mixing all the ingredients in a bowl; leave the oil until last and pour it in, whisking slightly. Add more salt if needed.
Prepare the chicken: grill the breast whole, making sure it is well done, and then cut it crosswise into slices (not too thin).
In a salad bowl, combine the lettuce, croutons, chicken and Parmesan shavings,then pour in the dressing and mix well until everything is evenly coated.
