Cut the broccoli, separating the hardest part of the stalk.
Boil the broccoli for about 20 minutes, then drain the water.
Place the boiled broccoli in a bowl and mash with a potato masher.
Add the eggs, Parmesan cheese, breadcrumbs and a pinch of salt and pepper.
Knead until smooth and form into patties. Place a cube of provola inside each one.
Dip the broccoli balls in breadcrumbs and fry in hot oil.
Wipe off excess oil with paper towels and serve piping hot.
